VOL DE NUIT comes from three plots planted with very old century-old Carignans. It is there, here, anchored and rooted deep in these schists that these old Carignans reveal their depth, aromatic and mineral length, ignoring any concentration. They transmit the mother rock.

TASTING NOTE:

Complex and intense aromatics of garrigue herbs, verbena, wilted rose and blackcurrant fruit paste. On the palate, the wine is linear and spicy with slight salinity. The finish is full of pure fruit flavours, juicy and supple.

FOOD PAIRING :

Hare « à la royale ».

TERROIR AND VINE MANAGEMENT:

Old vines, over 100 years old and trained in the traditional “gobelet” (bush vine), are cultivated entirely using biodynamic methods.
The terroirs are made up of light, stony well-drained soils composed of foliated schist and mica schist, forming small, stony mounds known as rankers. The southeast exposure helps preserve a touch of freshness in the late afternoon.
Soil maintenance is carried out by “Rambo,” our 8-year-old Comtois draft horse. Biodynamic preparations are regularly used.
The yield is limited to 19 hl/ha for these venerable Carignan vines.

GRAPE VARIETY:

100% Carignan from 3 parcels:
Sainte Eugénie, 5,280 vines dating back to 1900, south-eastern exposure, at an altitude of 143m.
Mas Raphael, 3,300 vines dating back to 1925, south-eastern exposure, at an altitude of 163m.
Coll del Beou, 6,500 vines dating back to 1925, south-eastern exposure, at an altitude of 330m

HARVEST:

Manual harvest. Double manual sorting of the bunches is done on a belt and vibrating table. Half of bunches are destemmed.

WINEMAKING :

Vinification in 50-hl stainless steel vats.

MATURATION AND BOTTLING:

In concrete egg shaped vats and 15hl oak casks until bottling.

10 to 15 years old
