TASTING NOTE:

Deep crimson colour leads to a very expressive nose of Burlat cherry, blackberry and blackcurrant. The palate echoes this range of flavours complemented by subtle notes of roasted coffee and sweet spices. Tannins are elegant and well-integrated. The finish is refreshing showing the precisely controlled aging process.

FOOD PAIRING:

Perfect pairing with duck with cherries or lamb tagine with prunes. Also perfect with chocolate in all its forms.

TERROIR AND VINE MANAGEMENT:

Vineyard farmed 100% biodynamically. This plot of Mas Fredes is very warm and windy. South-east exposure maintains the freshness in wine. This stony schist soil is light and very draining. A particularity of Mas Fredes is a vein of red clay in the subsoil, it contributes to unique texture and aromatics of Vintage Reserve.

Soil is ploughed, compost is applied between the rows. The age of the vines, trained in goblets, is 50 to 60 years. The average yield is 18 hl/ha with planting densities of 3500 to 4000 vines/ha.

GRAPE VARIETIES:

100% black Grenache.

HARVEST:

Manual between the last week of September and the second week of October. The bunches sorted twice manually on a belt and vibrating table. The fruit de-stemmed and slightly crushed. Potential alcohol content 15 to 18 %.

WINEMAKING :

Made in a temperature-controlled concrete vat and stainless-steel vat. Alcoholic fermentation at 25° C. A spirit is added (mutage) directly on the fermenting must, the wine is left to macerate on the skins for 15-20 days.

MATURATION:

Aging in an oxygen-poor environment in barrels, used 2 to 3 times, for 12 months, then in bottles.

GUARD TIME:

10 to 15 years old
