TASTING NOTES:

The wine has bright pale lemon colour. On the nose, it opens up with white flowers aromas of acacia & elderflower, developing to fresh stone fruit notes like juicy white peaches. On the palate, this lively wine has a lot of energy and a very nice acidity. Its fine texture and elegant aromatics linger on for a pleasant refreshing finish. A delightful white, pure and energetic.

FOOD PAIRINGS :

This fresh, fruity and energetic white will match perfectly with Yakitori (Japanese Skewered Chicken) or Ceviche.

TERROIR AND VINE MANAGEMENT:

Organic and biodynamic (100%). Several plots of Grenache white and grey, Maccabeu and Vermentino planted in a calcareous-schist terroir in the district of La Devèze.

GRAPE VARIETIES:

100% Mixed white grape varieties, Grenache blanc and gris, Maccabeu and Vermentino.

GRAPE HARVEST:

Hand-picked, manual double sorting and direct pressing of whole clusters.

WINEMAKING TECHNIQUES AND AGING:

In small stainless-steel vats. Natural yeast, without winemaking additives or SO2. Gentle winemaking at 17°C, entirely respecting the textures of the fruit and the soil.

MATURATION AND BOTTLING:

Ageing in stainless steel cuve until bottling.
